Riso Scotti Almond Unsweetened

 

Ingredients

  • 3 tbsp ground flaxseed
  • 112 ml water
  • 160 ml coconut oil
  • 190 gr honey
  • 95 ml Riso Scotti Almond Unsweetened
  • 4 ripe bananas
  • 385 gr whole-wheat flour
  • 3/4 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp vanilla extract or 1 sachet of vanilla powder
  • 100 gr dark chocolate drops

Execution

  • Preheat the oven to 180ºC.
  • In a bowl, mix the ground flaxseed with the water and set aside for 5 minutes.
  • In a second bowl, mix the flour, cinnamon, salt and baking soda and set aside.
  • In a bowl, mix the milk, melted coconut oil, honey and the flaxseed mixture. Mix well with a whisk until combined.
  • Mash the bananas with a fork and add to the mixture, stirring to combine.
  • Add the flour mixture and with a spatula or spoon combine all the ingredients together, until no pieces of the flour are visible.
  • Add the chocolate chips and mix with the rest of the mixture.
  • Grease an oblong mold, you don't need to flour it, and pour the mixture into it. With a spatula spread the surface of the mixture, cut 2 vertical slices of banana about ½ cm thick and spread them on the surface of the cake.
  • Bake in a preheated oven for 50 minutes. Let it cool for 10' and then remove it.
  • For more enjoyment, serve with peanut butter.
