Ingredients

  • 250 g rice Riso Scotti Arborio
  • 150 ml white wine
  • 400 ml stock (meat ή vegetable)
  • salt - pepper
  • 50 gr parmezan
  • 2 eggs
  • 100 gr mozzarella
  • For the breading:
  • 50 ml milk
  • 1 egg
  • 100 gr flour
  • 100 gr bread crumbs
  • Oil for frying (about 400ml)

Execution

  • Mix the broth and wine in a saucepan and cook the rice in this mixture according to the instructions on the package. Put the hot rice in a wide shallow dish and let it cool.
  • When it cools down a bit, add the beaten egg and grated parmesan to the rice and mix well.
  • Then we make rice balls like small meatballs, and press a cube of mozzarella into each ball and close it.
  • Beat the other egg with the milk, pass the balls through the flour, then the egg and finally the breadcrumbs.
  • Fry the balls in a deep pan in hot oil until golden brown.
